The part software can fix, and the part it cannot
Shake shows up in two places at once. The camera moves between frames, which puts the subject in a different spot each time — that is the jitter you see on playback, and software corrects it well by shifting and rotating frames to follow a smoothed path.
The camera also moves during each exposure, which smears that individual frame. No amount of realignment undoes it. Stabilise footage shot at a slow shutter speed and you get a rock-steady shot made of soft frames, which some people find more unsettling than the original shake, because the eye expects blur to accompany movement. If your clip looks smeared when paused, that is the ceiling on what stabilising can achieve.
Stabilising always costs framing
To cancel movement the tool has to push each frame around, and that leaves empty wedges at the edges. Every stabiliser hides them the same way: by cropping inward and scaling back up. The smoother you ask the result to be, the more it has to crop.
Two practical consequences. First, anything close to the edge of frame can be cropped out entirely, so check your composition afterwards rather than assuming it survived. Second, the crop costs resolution — a 4K clip stabilised hard can land near 1080p in real detail. If you know in advance that a shot will need it, frame looser than feels right and give the tool room to work.
Jello is a different problem
Most phone and mirrorless cameras use a rolling shutter: the sensor is read one line at a time, top to bottom, so the bottom of the frame is captured a fraction later than the top. Pan quickly and vertical lines lean; lampposts and door frames appear to bend and sway. This is a distortion inside the frame rather than a misplacement of it, so ordinary stabilisation only softens it. The reliable fixes are at capture time — pan more slowly, use a faster shutter, or use a camera with a mechanical or global shutter. - Compare at full size. The crop is invisible on a phone-sized preview and obvious on a television.
