Converting, compressing, cropping, trimming and basic stabilising are all a command away, and the result is identical to what any paid app produces because most paid apps are calling ffmpeg underneath. What you pay for in an app is not the output; it is not having to know the flags, being able to see the result before committing to it, and getting a sensible answer when the file is unusual.
Upscaling is the exception. This is the one job where the tool genuinely changes the result, because a model is reconstructing detail rather than resampling pixels. The jobs, and what actually decides them
Compressing is decided by the encoder and the bitrate you give it, not by the app. Anything using x264 or x265 at the same settings produces the same file. What differs is whether the app lets you see the result before committing and whether it picks a sensible bitrate for the content rather than a fixed one.
Converting is decided by whether a re-encode happens at all. Changing a MOV to an MP4 is often just a container change and should be instant and lossless; if a converter takes ten minutes and the file gets softer, it re-encoded something it did not need to.
Denoising is the one where taste matters most, because noise and detail are the same thing to an algorithm. Every denoiser is trading one against the other, and the right amount depends on whether the result will be watched at full size or on a phone.
Stabilising always costs framing. The picture has to be cropped in to have room to move, so a heavily stabilised shot is a tighter shot. Any tool claiming otherwise is either cropping without telling you or warping the frame.
